I'm kind of a big fat cheater. At anyrate, I used our recent favourite chocolate babycake recipe, and then got fancy with things like coconut nectar, some of the rich cream off the top of our milk, organic butter, a pinch of salt, and plenty of raw cacao powder. The result was an icing that was firm enough to extrude through a fancy icing tip. My hurried efforts were due to the fact I was rushing to a meeting, unfortunately. The final product, with the addition of our ever faithful callebaut chips pleased Papa Ed, whose belated birthday cakes these were. And a good time was had by all.
ingredients:
1/4 cup coconut nectar
1/4 cup (the heaviest) cream
2 tbsp butter
pinch of salt
1/4 cup raw cacao
directions:
1. combine and whip if possible
2. decorate!
3. eat.
