Simple Blueberry Muffins -- vegan, nut free, basic




ingredients:

1/2  cup coconut oil
1 1/2 cup boiling water
2 tbsp lemon juice
1 tbsp vanilla extract

2 tsp egg replacer mixed with 1/2 cup water

1/2 cup raw agave


1/2  tsp sea salt
1/2 tsp baking soda

2 cups kamut flour


2 cups frozen blueberries



directions:

1. combine the ingredients in the order listed
2. gently fold in the kamut flour
3. gently fold in the blueberries
4. scoop into 24 prepared muffin cups
5. bake at 345 for 25 minutes
