I wish I could take credit for that because I think it sums up how we should eat. Simply -- eat stuff that really is food, instead of stuff that is food like substance. The supermarket is almost entirely food-like-substances, and, my friends, you should probably never ever eat them.

Fortunately, there is a world of deliciousness out there, and it can all be had in a way that not only doesn't harm your health, but in a way that benefits you hugely.

I think it's important to eat stuff that satisfies you, that keeps your blood sugar stable, and that gives you stuff your body really needs to run optimally.

But baby, it's gotta taste good.

I really like getting experimental in the kitchen. I love cooking, I love layering flavours, and I love coming up with really super yummy food. I have very strong opinions about what constitutes food, and there are a lot of things I won't touch in the kitchen. Bottom line? Pretty much everything I make is ridiculously good for you even if it tastes decadent. Although there are occasional big fat cheats ... but even those stick to real food, my friends.

For food that is usual gluten free, usually free of cane sugar, usually super low on the glycemic index, full of protein, fiber, flavour, and excellent energy, join me and Alice down the rabbit hole.

Every recipe on this blog is my own original effort and idea, so please pass 'em on, giving credit where credit is due.

Chocolate Ganache Decadence -- raw, vegan, and gluten free

This ... cake ... pie? ... cake! ... happened. Why? I don't know, but I'm sure glad it did. It is ... ridiculous. That's the only word I can think of.  It's so incredibly delicious, so smooth, so silky, so creamy, so mind-numbingly filled with flavour and awesomeness that all we could do was stare at each other with this incredible taste in our mouths as we ate it, expressions bordering that fine line between bafflement and pain. That "how the ... what the ... omg ... this ... this ... this ..." expression. You'd know it if you saw it. Trust me.

It's an indulgence. It's a special occasion kind of treat. It's so tasty. It's also incredibly easy to make.

I made it a couple of hours before I needed it. In a spring form pan. Lined with foil and then baking parchment and oiled with coconut oil. Made removal easy! Might have been over kill. Any pie plate would also work. Parchment is your frieeeeeeeeeend. Next time I will make it at least 1 day ahead, if not two. The texture and flavour of the crust improved by day 2, although it was fine on day one, and chilling over night allowed the cake/pie/decadence to firm up just a wee bit more. So. Good. So flipping good. Gah.














note: you'll need to let the dates soak and the oil and cocoa butter melt, so if you get those started and then move on to your crust, that would work well.


equipment needed:
pie plate or spring form pan
grinder for chia seeds and sunflower seeds (If you use sunflower seeds instead of raw almond meal for your crust)
parchment
foil (if using a spring form pan. Not essential. But you know, um, helpful.)
immersion blender (or blender)


ganache ingredients:

A
1 cup pitted dates (I use parnoosh sayer dates but you can use your own preference) (pick through them carefully to make sure there are indeed no pits or shards there of.)
2 cups hot water
1/2 cup coconut oil
1/2 cup raw cacao butter
1 tsp vanilla extract

B
1 cup raw cacao
1 cup coconut sugar (you can start with less and taste if you want it to be less sweet)
1/2 tsp sea salt
1/2 cup organic coconut milk powder


ganache directions:

1. combine the items from A in a bowl and let sit until the cacao butter and coconut oil have melted. This will also give the dates time to soften beautifully.
2. while your oil is melting and your dates are softening, make the crust
3. once the oil has melted, use your immersion blender to puree the dates/oil/water from section A. When you think it is smooth enough, puree some more. And then a little longer. You want this ganache to be so creamy and silky and smooth that dead poets would come back from the grave to write an ode to it.
4. add the ingredient from part B and puree again until even silkier and more perfect
5. If you are being parsimonious with your coconut sugar, this would be a good time to dip a scrupulously clean spoon into the mix and taste. I personally thought it was perfect with the whole cup of coconut sugar to balance the whole cup of cacao. That's the golden ratio for cacao and sweetness. However, your dates may be sweeter than mine, or your cacao less dark and sinister. Don't be afraid to trust yourself!
6. When you know your ganache tastes just right, let it cool to room temperature.





crust ingredients:
1 cup raw almond meal or raw sunflower seed meal
1/4 to 1/2 cup coconut sugar, depends on your tongue
1/4 cup raw cacao
1/4 cup ground chia
1/4 tsp sea salt
1/2 tsp ground vanilla bean
2 tbsp extra virgin coconut oil
2 tbsp water

crust directions:
1. combine the almond or sunflower seed meal in a bowl with the coconut sugar, cacao, chia, sea salt, vanilla bean
2. add the coconut oil and use a fork to crush it into the dry mixture to the best of your abilities
3. add the water, and distribute beautifully
4. press the mixture into the bottom of your lined/greased springform pan or pie plate

5. see above
6. do a little dance

7. When  your ganache has cooled enough, pour it into the prepared crust in the prepared pan, and pop it in the fridge.
8. When it has chilled enough, you can remove it from the pan (springform) or serve it from the pan if it's a pie plate.

Prepare to be amazed!!!!

Cacao and Hemp Energy Balls -- delicious whole food fuel for vegans

My son calls these snowballs. The coconut on the outside is mostly so they won't be sticky. Crushed pecans or almonds would work too, but we were keeping it all nut free. One of my son's friend's has an allergy to nuts, and we like to have snacks he can enjoy too. These are delicious, balanced, snackable, satisfying, and perfect for breakfast, snack, or dessert. I hope you like 'em as much as we do!







ingredients:

1 cup hemp hearts
1/2 cup sunflower seeds
2  cups shredded coconut

1/4 cup ground chia

3/4  cup raw cacao
1/2 tsp sea salt
1  tsp ground vanilla bean

1 1/2 cups pitted honey dates -- picked through

1 or 2 tbsp vanilla extract or water


directions:

For this recipe you will need a food processor or something that can also function like a food processor.

1. process hemp hearts, sunflower seeds, shredded coconut, ground chia, raw cacao, sea salt, and ground vanilla until perfectly reduced to dust.
2. add dates and pulse until combined well. Or until you lose your mind.
3. add vanilla and as little water as possible whilst running the processor until a thick dough forms. (Do not add too much water. If it isn't stuck together in a blob and is crumbly or sandy  looking, you need more water. If it's like a paste, you've added to much, and you won't be able to make it into balls. Press it into a silicone pan and chill, then cut into small squares if you end up adding too much water. It will still be delicious.)
4. let sit for a while
5. roll into balls, and roll the balls in shredded coconut.

Chocolate Energy Balls V 2.0

So, these. If you love dark chocolate, these are kind of like candy. If you hate dark chocolate, they might taste like dirt to you. We adore them. Nut free, raw, and vegan. Oh, yeah!!








ingredients:

1 cup hemp hearts
1/2 cup sunflower seeds
2  cups shredded coconut

1/4 cup ground chia

3/4  cup raw cacao
1/2 tsp sea salt
1  tbsp ground vanilla

1 1/2 cups pitted honey dates -- picked through

1 or 2 tbsp vanilla extract or water


directions:

1. process hemp hearts, sunflower seeds, shredded coconut, ground chia, raw cacao, sea salt, and ground vanilla until perfectly reduced to dust.

5. roll into balls, and roll the balls in shredded coconut. Or cacao if you prefer. I don't prefer. I like the coconut. Says obvious guy.

Date and Pecan Energy Balls

Do not make these for school. Make these for yourself, and hoard them in your freezer. Don't tell your husband they are there. I repeat: do not tell your husband they are there. My son said they taste like caramel. I've long held that date and pecan together have some kind of alchemy. Anyway, these don't taste like they are good for you. When you want a sweet bite after dinner or a little nibble to keep you going, these fit the bill.






2 cups shredded coconut
1/4 cup ground chia
1 cup hemp hearts
1 cup pecans

3/4 tsp sea salt
1 tbsp ground vanilla bean
1 tsp ceylon cinnamon

1 1/2 cup dates


1 tbsp vanilla extract
up to 1/4 cup water


1. process the coconut, ground chia, hemp hearts, and pecans with the sea salt, ground vanilla, and cinnamon.
2. then add the dates, and pulse until fully deconstructed
3. finally, process in the vanilla extract and as little water as you can to form a homogeneous dough
4. let it sit for a little while, then roll into balls, and roll the balls in shredded coconut.
5. store in the freezer.

Peanut Butter and Date 'fudge'

Oh man oh man I'm addicted. I had to make a third batch. Yes, three.

I don't know if you've ever tried date with creamy peanut butter. We get these dates from 'Parnoosh'. Sometimes they are dry and unappealing to eat as is, but still suffice for baking. Sometimes they are soft and creamy and kind of delectable. I opened a fresh box to make a lovely vegan date and vanilla ice cream, and my son requested four dates filled with our fave organic smooth peanut butter.  They were so soft and so creamy that I too decided to try one. And I realized just how decadently fabulous date and peanut butter are together. I might have known this before, but my memory being what it is, I might also have forgotten.

Date and peanut butter -- an out of this world combination. Unless you hate peanut butter. Or date. Or both. In which case, you have my sympathies but that's it. And, as my darling Bubbi Edith used to say: "More for me."

(I read the above as: I had to make it to third base. I don't know if you've ever tried to date creamy peanut butter. Now THAT would be a different movie entirely.)






ingredients:

2 cups shredded coconut
1/4 cup ground chia
1 cup hemp hearts

1/2 tsp sea salt
2 tbsp ground vanilla bean

1 cup dates

1/2 cup smooth peanut butter
1/4 cup water


directions:

1. put the coconut, ground chia, hemp hearts, ground flax, sea salt, and ground vanilla bean into the food processor
2. process until completely pulverized and homogenous
3. add the dates and pulse until completely processed
4. add the peanut butter and pulse until fully combined, adding the water as the food processor is running to form a thick dough
5. press into 2 square silicone baking pans and chill in the freezer
6. when firm, turn onto a cutting board and cut into small bars -- I do 8 by 4, resulting in 32 pieces per pan
7. store in the freezer!

Chocolate Ice Cream Update -- vegan, whole foods, decadent ice cream

As I enjoyed a tiny scoop of this after dinner tonight I was struck by the following thought: I am a genius. This is genius.

Okay so I don't usually go off on such a high rant about myself ... but come on -- mixing dates and cacao and coming up with this? Genius!

I took whole foods and transformed them into something more than the sum of its parts. Something rich, creamy, decadent, delicious, and utterly satisfying.






ingredients:

1 cup pitted honey dates
3 cups hot water
1/2 cup extra virgin coconut oil (1 cup)

1 cup raw cacao
2 tbsp vanilla extract
1/2 tsp sea salt
1 tsp stevia

1/2 cup coconut nectar




directions:
1. combine the dates and the hot water, tthe coconut oil, and allow to sit for 10 minutes
2. add the coconut nectar then puree with an immersion blender (or in your blender if you have one!!!)
3. add the rest of the ingredients and mix well
4. chill thoroughly!!

This is rich and smooth and velvety and tastes amazing. Prepare to be amazed!

Sticky Kids Stuff -- Vegan Fudge the new revolution

Well, I had my food processor out this morning to make green noodles. Yep, it's that kind of day. Chickpea noodle soup instead of chicken noodle soup for us tonight. Eyeing my food processor I thought ... what if ... what if ... what if ... and before I knew it I was throwing some stuff in and making this sticky amazing fudgey delight that has no crap and no sugar and no gluten and no nothing bad for you and holy hannah it's like eating chocolate frosting in the 70s ... Anyway, I had a couple of pieces after lunch ... after my salad of shredded carrot, tomato, and sauerkraut. Yes, I know I'm weird. But you love me anyway. xoxo

It has that glossy gorgeousness and that intense chocolateyness that screams I can't possibly be good for you ... but alas it is. Yahoooooooooooooo.








ingredients:

2 cups shredded coconut
1 cup cacao

1/2 tsp sea salt
2 tbsp ground vanilla bean
1 tsp stevia powder optional

1/4 cup ground chia seeds
1/4 cup ground flax seeds

1 cup dates

1/2 cup coconut oil
1/4 cup water
1 tbsp vanilla extract


directions:

1. put coconut, cacao, salt, vanilla, stevia, ground flax, ground chia in your food processor
2. process!!!
3. add 1 cup dates -- pick them over to make sure there are no pits or you will definitely regret it.
4. process!! pulse!!!
5. add 1/2 cup coconut oil
6. pulse!
7. add  1/4 cup water and vanilla and whirl until smooth
8. scoop into 2 square silicone pans and press flat
9. score into pieces
10. chill
11. break apart and store in an airtight container. I like it in the freezer, but that's just me.

Raw Vegan Chocolate Ice Cream V 2.0-- rich, creamy, smooth, and delicious


Version 2. What can I say? I'm addicted. Sublime. Subliiiiiiiiiime.







ingredients:

1 cup pitted honey dates
3 cups hot water
1/2 cup extra virgin coconut oil
1/2 cup unrefined cacao butter
3/4 cup raw cacao
2 tbsp vanilla extract
1/2 tsp sea salt
3/4 tsp stevia

1/2 cup coconut nectar




directions:
1. combine the dates and the hot water, the cacao butter, and the coconut oil, and allow to sit for 10 minutes
2. add the coconut nectar then puree with an immersion blender (or in your blender if you have one!!!)
3. add the rest of the ingredients and mix well
4. chill thoroughly!!

This is rich and smooth and velvety and tastes amazing. Prepare to be amazed!

Just to be super crazy this time around, I did  a full cup of cacao and a full tsp of stevia. Turbo chocolate for true chocolate lovers only.

Honey Vanilla Ice Cream

4 cups raw whole milk
1 cup raw honey
2 tbsp organic vanilla extract
generous pinch of salt





Raw Vegan Ice Cream

My kid could eat this everyday!!






ingredients:

1 cup pitted honey dates
3 cups warm water
1/2 cup extra virgin coconut oil
3/4 cup raw cacao
2 tbsp vanilla extract
1/2 tsp sea salt
3/4 tsp stevia

1/2 cup coconut nectar


(variation: add 2 tbsp ground vanilla bean)


directions:
1. combine the dates and the hot water and coconut oil, and allow to sit for 10 minutes
2. puree with an immersion blender (or in your blender if you have one!!!)
3. add the rest of the ingredients and mix well
4. chill thoroughly!!
5. freeze according to the directions of your ice cream maker's manufacturer.
6. say that last sentence fast 5 times and then realize it's barely English.
7. put the ice cream in the freezer to firm up.

This is dark, creamy, and verging on obscene. For true chocolate lovers only.

Chocolate Goat Milk Ice Cream -- sugar free fabulousness!

With goat milk burning a hole in our pockets, we came up with this pretty fabulous ice cream. Chocolate, peanut butter, delicious.



ingredients:

1 cup coconut nectar
1 L goat milk
1/2 cup raw cacao powder
1/8 - 1/4  tsp sea salt
2 tbsp organic vanilla extract

1/2 cup smooth organic peanut butter


directions:

1. combine ingredients and chill
2. freeze according to directions in your ice cream maker

Date and Almond Energy Bars -- raw, vegan, sugar free, hot to trot ...

Brand new energy bars fresh off the press. These ones focus on date, almond, and vanilla, so they have a wonderful mellow flavour, all the richness you want in an energy bar, and will provide a satisfying snack for those who don't want chocolate. Which, for some reason, includes my chocolate loving husband right now. I'm not sure if body-snatchers should be implicated or not ...

Colin says these give him a hit of caramel, and he loves the way the different flavours emerge one by one. He's gone through most of the batch in just a few days ...






ingredients:


1 cup raw almonds
2 cup shredded coconut
1/2 cup hemp hearts
1/4 cup ground flax
2 tbsp ground vanilla
2 tsp ceylon cinnamon
3/4 tsp sea salt

1 cup pitted honey dates

1/2 cup coconut oil


directions:

1. combine the almonds, coconut, hemp hearts, flax meal, vanilla, cinnamon, and sea salt in a food processor and process until sand-like.
2. add dates and pulse until evenly ground
3. add coconut oil and pulse until evenly combined
4. press into 2 silicone square pans and score into bars
5. chill or freeze, then break apart into pieces and store in airtight containers. we like 'em frozen, but chilled is also good!!!!

10 black olives, cut into pieces off the pit

Someone is playing around with my energy bars ... Chocolate Energy Bar Variation


I wonder what would happen if .... 

That is how my brain works. Now I know.











ingredients:

1/2 cup raw sunflower seeds
1/2 cup raw hemp hearts

1 cup raw cacao powder
1 tbsp ground vanilla bean
3/4 tsp sea salt
1/2 tsp stevia powder
1/4 cup ground flax seed
2 cups shredded coconut
1/4 cup wheat grass powder

1 cup pitted honey dates

1/2 cup coconut oil


directions:

1. combine the first set of ingredients (up to not including the dates) and process until fully powdered
2. add the  pitted honey dates (check for pits) and pulse until completely chopped

4. add the coconut oil and pulse until combined
5. press into a silicone pan (I use 2 square ones), and score into pieces
6. chill or freeze until set
7. break along score marks and store in airtight containers in the fridge


Can you spot the difference? These bars are fantastic. I love the change!!!!!!

Orange and lemon ice cream -- an awesome vegan treat






ingredients:

400 ml can of organic coconut milk (don't use low fat, use regular)
1/2 cup coconut nectar

30 drops orange essential oil
30 drops lemon essential oil

1/4 tsp sea salt


directions:

1. combine the ingredients and chill
2. freeze in your ice cream maker according to the manufacturers directions.

I made a double batch!!!

Due to such things as the coconut milk and the coconut nectar, this ice cream stays creamy and smooth when frozen. Yum yum yum.

Chocolate Energy Bars -- sunflower seeds and wheatgrass go completely mute

My husband and son managed to go through an entire batch of these in 5 days. So, today I'm getting crafty and making a double. That's what happens when you live with chocolate lovers. And honestly, these taste that good. But you don't have to worry about devouring them because there is nothing in here you shouldn't eat. Good tasting, and good for you, too!










ingredients:

1/2 cup raw sunflower seeds
1/2 cup raw hemp hearts

1 cup raw cacao powder
1 tbsp ground vanilla bean
3/4 tsp sea salt
1/2 tsp stevia powder
1/4 cup ground flax seed
1 cup shredded coconut
1/4 cup wheat grass powder

1 cup pitted honey dates

1/2 cup coconut butter
1/2 cup coconut oil


directions:

1. combine the first set of ingredients (up to not including the dates) and process until fully powdered
2. add the  pitted honey dates (check for pits) and pulse until completely chopped
3. add the coconut butter and pulse until combined
4. add the coconut oil and pulse until combined
5. press into a silicone pan (I use 2 square ones), and score into pieces
6. chill or freeze until set
7. break along score marks and store in airtight containers in the fridge

Chocolate "easter" eggs

My son asked me if we could make easter eggs and decorate them. So, my big idea was to draw on little squares of foil with permanent marker and then wrap them around these. Guess what? It worked. This are so intensely chocolatey and delicious.








ingredients:

1/2 cup hemp hearts
1/2 cup sunflower seeds
1 cup shredded coconut

1 cup raw cacao
1/2 tsp sea salt
1/2 tsp stevia powder
2  tbsp ground vanilla

1 1/2 cups pitted honey dates

1 tbsp vanilla extract or water

directions:

1. combine the hemp hearts, sunflower seeds, coconut, raw cacao, sea salt, stevia powder, and ground vanilla in a food processor, and process until as homogeneous as possible
2. add the honey dates and the vanilla and pulse and then process until it starts to form a 'dough'. Don't stop processing until this happens!!
3. roll the dough into small egg shapes
4. how many you get will depend on the size. I got about 40.
