2 tbsp extra virgin coconut oil
1 cup chopped red onion
2 cups massoor lentils
1 cup green peas
2 cups chopped sweet potato
2 cups chopped parsnip
1/4 cup sliced dried mushrooms, crumbled
4 cups chopped green cabbage
1 1/2 cup sliced carrot
1 1/2 cup sliced celery
1 tbsp sea salt
1 tbsp marjoram
4 cups water
directions:
1. load up the crockpot with the ingredients in the order listed
2. cook for 4 to 6 hours on medium or low heat
Enjoy with a loaf of rustic bread, a pan of socca, some of my crazy savoury biscuits, or a fresh salad. Whatever you like!
