I wish I could take credit for that because I think it sums up how we should eat. Simply -- eat stuff that really is food, instead of stuff that is food like substance. The supermarket is almost entirely food-like-substances, and, my friends, you should probably never ever eat them.

Fortunately, there is a world of deliciousness out there, and it can all be had in a way that not only doesn't harm your health, but in a way that benefits you hugely.

I think it's important to eat stuff that satisfies you, that keeps your blood sugar stable, and that gives you stuff your body really needs to run optimally.

But baby, it's gotta taste good.

I really like getting experimental in the kitchen. I love cooking, I love layering flavours, and I love coming up with really super yummy food. I have very strong opinions about what constitutes food, and there are a lot of things I won't touch in the kitchen. Bottom line? Pretty much everything I make is ridiculously good for you even if it tastes decadent. Although there are occasional big fat cheats ... but even those stick to real food, my friends.

For food that is usual gluten free, usually free of cane sugar, usually super low on the glycemic index, full of protein, fiber, flavour, and excellent energy, join me and Alice down the rabbit hole.

Zesty Crackers



I'm an addict. I've been forced to acknowledge it. But I can't stop nibbling on these crackers ... so good. These are my favourite snack right now. They are high in protein, and chock full of zesty deliciousness. Must. Eat. More.


ingredients:

2 eggs
4 tbsp organic coconut butter (this is made from ground up coconuts and is delicious -- I use Artisana)
2 tbsp apple cider vinegar
2 tbsp water

1/2 cup flax meal

2 tbsp mesquite powder
1 1/2  tsp sea salt
1 tbsp chili powder (not the same as chili pepper. and depending on how spicy yours is, you might want to adjust this. mine is not 'hot' at all, just savoury)
1/4 tsp ground chipotle (optional)
3 cups almond flour (JK Gourmet)
1/2 tsp baking soda


directions:

1. warm the coconut butter lightly to melt it.
2. add the water, vinegar, and beat in the eggs
3. add the flax meal, and mix thoroughly
4. add the seasonings and the mesquite, and mix
5. add the baking soda, and mix thoroughly
6. add the almond flour cup by cup, and mix thoroughly
7. bake the dough now, or wrap securely and save for later
8. divide the dough into four portions
9. roll each portion of dough between pieces of parchment, or on a silicone baking sheet, and covered by a piece of parchment. Don't try to roll directly on the dough on your counter,  because you will get a sticky mess and then you'll curse my name forever and stop reading my blog ...
10. once you have achieved a reasonably thin flat dough, score it into squares with a dull knife directly on the mat or parchment. Be careful not to get the edges thinner than the rest.
11. put the parchment or silicone mat onto a baking sheet, and bake at 300 for 24 minutes in the upper half of the oven. If you are baking 2 trays at once, switch positions half way through. Turn off the oven after 24 minutes, and leave the crackers in for another 30. This will make them nice and crisp, without burning them.
12. Break the crackers apart into squares and store them in an airtight container when thoroughly cool.
13. hide them so no one else knows they are there. Just kidding. Sort of.


update: if these last you a number of days, and have for some reason become ... uncrisp ... 30 minutes in a medium heat oven (around 250 or 275) will render them once again delightfully crisp. 

rainy day variation: 3 tbsp apple cider vinegar instead of 2, 1 tbsp chili powder instead of 1 1/2 tsp, 1/4 cup nutritional yeast -- still zesty and delicious ... but different. I like it!
